Kuboos
with Channa Masala
Kuboos
which is Arabian in origin, definitely goes well with non vegetarian items like
grilled chicken or fish. But I being a vegetarian at home J(sigh),
had to try it out with something vegetarian. So with Jilsy’s definite help, the
below given channa masala recipe was born or rather made up ;-). But it came
out really well and how could we not post it here? So here is yummy and soft
kuboos with hot and spicy Channa. Do serve it with hummus or even yoghurt and
some salad.
Ingredients for kuboos:
1. Maida
or all purpose flour 1 cup
2. Wheat
flour 1 cup
3. Yeast 1 tbsp
4. Lukewarm
water ¼ cup
5. Oil 1 tsp
6. Milk ½ cup
7. Sugar 1 tsp
8. Salt 1
½ tsp
Method:
1. Sift
maida, wheat flour and salt.
2. Dissolve
yeast in lukewarm water adding sugar and allow it to rise for 10 mins. Add the
risen yeast to the flour mix.
3. Add
oil and milk little by little and knead well to make a soft dough.
5. Make
into equal sized balls. Roll out each ball into rotis and cook both sides on a
hot tava or grill.
Yield: 7 nos.
Ingredients for chana masala:
1. Chana
or Bengal gram( cooked) 640g (1 ½
cup)
2. Onion 40
g
3. Oil 1
tbsp
4. Garlic 1
tbsp
5. Green
chilli 1 ½ tbsp
6. Capsicum 40g
7. Chilli
powder 1
tsp
8. Turmeric
powder ½
tsp
9. Coriander
powder 1 ½
tbsp
10. Fennel
seeds 1
tbsp
11. Red
Paprika sauce 1
tsp
12. Tomato
ketchup 1
½ tbsp
13. Salt
to
taste
Method of preparation of Chana Masala:
1. In
a pan heat oil. Add chopped onions, garlic, fennel seeds and green chilli and
sauté well. Add salt at this stage.
2. Now
add cooked Chana and sauté for a minute.
3. Add
chilli powder, turmeric powder, coriander powder, red paprika sauce and tomato
ketchup.
4. Mix
well, cook for a minute and remove from fire.
Yield
: 2 cups

Information:
1 kuboos gives
8.1 g of protein, 2.2 g of fat, 48.4 g of carbohydrate, 246.7 KCals, 43.1 mg of
Calcium and 2.5 mg of iron.
1 cup of Chana masala gives 10.35 g of protein, 10.6 g
of fat, 39.5 g f carbohydrate, 293.8 KCals, 125.5 mg of calcium and 2.8 mg of
iron.
